In the past, I've deployed a solution based on Zigbee for mesh but now I'm working on a different problem requiring the connection to be more secure. I think that BLE mesh will play a better role in that so I'm asking for some guidance.

Thank you for your interest in our products and BLE Mesh.

Sounds like an exciting project.
That means that if I want to control 100 devices I will need to have 100 services on the client? Where is each of them configured to publish for a given address?
The implementation in the SDK sample is just for demonstration purposes. You wouldn't need to have 100 client models in order to control all of the lights.
You can use only one, and change the publication address to publish the message to the correct server. You can use unicast addresses to target a specific node or you can use group addresses to publish to a larger group.
I.e using group addresses you can publish a message to "Living room", "Garage" or whatever you choose. You can publish to all nodes, just even/odd addresses etc. There is a lot of possibilities.

Here you can find another thread discussing the RGB lighting scenario:
RE: How to get BH1749 Light sensor RGB values data from mesh sensor along with BME680
