I don't personally know of any such projects, but I could suggest that you have a look at the Zephyr forums on Discord. You can find a link under https://www.zephyrproject.org/# that takes you there. This is a forum where developers might share such projects that is similar and supported in nRF Connect SDK

Yes, this is correct. The ZigBee template does not feature multi-protocol out of the box, but it can support it by adding some configurations and code to it. For instance you can observe ho the MPSL (Multiprotocol Service Layer) sample uses the MPSL Library https://developer.nordicsemi.com/nRF_Connect_SDK/doc/latest/nrf/samples/mpsl/timeslot/README.html, and add these configurations and support to a ZigBee Template with BLE

Do note that this sample does not use Zigbee or Bluetooth and only showcases the MPSL usage

Unfortunately we do not have any samples showcasing how to do multiprotocol out of the box in NCS, so it is up to the user to use the available documentation such as https://developer.nordicsemi.com/nRF_Connect_SDK/doc/latest/nrf/protocols/multiprotocol/index.html and the samples you mentioned to guide you.

You might find developers at the Zephyr discord forums that have used said multiprotocol features

Apologies for not being more of help, but unfortunately we won't be able to look closer into this at this point in time due to Christmas Holiday period here in Norway.
