So i can just get an nrf9160 DK instead on buying an nrf52840 dk and a nrf9161 dk ?

You could try to ask our sales people nicely and maybe they will be able to get you one. No promises though.

The nRF9160DK has both an nRF9160 and an nRF52840 on it, so yes, you should be able to use it for for "only nRF9160", "only nRF52840" or "combined".

The nRF52840 controls some of the configurations of the DK, so you might have to flash a "setup program" to this to use the nRF9160 as standalone, but it does not affect the nRF9160 directly.
