In fact, i'm kinda obligated to use the nRF52840, so it's a dead end to work with the nRF7002ek shield. But i've seen some people using the esp8266 even on nRF52833 so i assumed it has lighter impact on the RAM.

Do you have any idea about that?

Due to the memory limitation of nRF52840, I suggest you consider using nRF5340DK with nRF7002ek shield.
