In fact, it was enough to use "bt_le_ext_adv_set_data" once the data was updated (because I use extended advertising and not the legacy)

This normally means that the advertising set is not active if the adv is NULL when when returned from bt_le_adv_lookup_legacy.

Are you able to run the bthome sensor template sample and achieve expected results? If so, there might be something wrong with managing of roles in your application state machine.
