I was able to resolve it, just changing some Kconfig file, but I'm still trying to figure out what option I enabled that makes it work.

Yes, you can have multiple instances of the various models. In the Bluetooth Mesh: Light switch sample, up to four instances of the Generic OnOff Client model are instantiated to control the state of LEDs on servers, and in the Bluetooth: Mesh Generic OnOff, Generic Level, Lighting & Vendor Models sample, the root element of the mesh node has both a Generic OnOff Server and a Generic OnOff Client model.

Do note that the samples have unique addresses, since they are a model in 4 different elements.

I recommend that you inspect these samples to see how it is set up there, and compare them to your firmware.
