The best place to start would be with the AT Client. This allows you to enter e.g. PIN code (AT+CPIN) to verify the need to for a PIN. Then you can use Facility lock (AT+CLCK) to disable the need for PIN.

We do recommend enabling UICC state notification (AT%XSIM) to receive messages when something is wrong with the SIM or has been removed.
Unfortunately there is no mean to remove the PIN. Is there any way to enter a PIN (lwm2m client) without using the AT commands ?
You can send AT Commands using the Modem library. Have a look at nrf_modem_at.h. You can send AT commands with e.g.

err = nrf_modem_at_printf("AT+CFUN=1");

Kind regards,
Øyvind

The second SIM is provided by the operator as a SIM for IOT, wearable, smartwatches,...

Unfortunately there is no mean to remove the PIN. Is there any way to enter a PIN (lwm2m client) without using the AT commands ?

As mentioned, once the PIN has been entered the nRF9161 is connecting properly to the internet ... therefore the SIM is working properly...

What kind of SIM is this? Usually a pure data SIM should not need to have PIN code entered for use.
