Let me give a good news. I read the nrf52840dk_nrf52840.overlay, and I saw that the only thing inside of this file, it is the BME680 I2C address, then It is working just duplicating the file with a new name rak4631_nrf52840.

As you can see in the screenshot below, the problem was in the Zephyr sample for bme680 sensor, because it is missing the overlay file, or at least a advise that this example has configuration file overlay only for two boards: adafruit_feather_nrf52840.overlay and nrf52840dk_nrf52840.overlay :-) For Zephyr beginner, like me, it can be a big problem :-)

Yes I understood that.
You need to looking to boards\nrf52840dk_nrf52840.overlay file and see what in there.
Apply the same to your rak4631_nrf52840.overlay. If you don't have that file, create one and put into boards folder.

Did you understand that I have two different boards:

nrf52840dk_nrf52840: without error
rak4631_nrf52840: with the reported error.

Hi,
When you see an error please try to debug. The last line is:

C:/nordic/myapps/bme680/src/main.c:14:42: note: in expansion of macro 'DEVICE_DT_GET_ONE'
14 | const struct device *const dev = DEVICE_DT_GET_ONE(bosch_bme680);

Device tree having trouble finding the bosch_bme680 device. Have you checked if you define the i2c node that compatible with the bosch_bme680 ?
Please take a look at the boards\nrf52840dk_nrf52840.overlay in the bme680 sample.
