Hi Erling, looks like the "limiting factor" is the battery. The general rule of thumb is that the operating temperature for LiPo batteries is between 5^oC ~ 35^oC. That said it should be able to operate in colder temperature. Here is some more information for the LiPo battery used in the Thingy:91

Hope this gives you an indication to how the Thingy:91 can operate.

Could you elaborate on the normal operating temperature range? Is it the battery's restriction or some other component?

Hello,

The Thingy:91 has a normal operating temperature range: 5^oC ~ 35^oC, but the nRF9160 and nRF52840 has an operating temperature between -40^oC and +85^oC.
