I am currently working on a project using a custom board based on the E73-2G4M08S1C SoM, which features the nrf52840 chip.
1. Which target board should I use when flashing the nrf52840 chip with nRF Connect (ebyte_e73_tbb/nrf52832 or nrf52840dk/nrf52840)?

I think you need to choose nrf52840dk/nrf52840 as the E73-2G4M08S1C SoM uses the nRF52840 chip, which matches the nRF52840 DK board target.

2. Are there any specific considerations or resources (e.g., example projects or libraries) for integrating the MAX31856 with the nrf52840 and sending the sensor data over BLE? Any guidance or example code would be greatly appreciated!

We do not have sample specifically for this sensor MAX31856. You can look at this sample CPU Die Temperature polling.

You'll need to configure the SPI interface for communication with the MAX31856 and also need to adjust the pin configurations and CS GPIO to match your specific hardware setups. You can read this documentation https://academy.nordicsemi.com/courses/nrf-connect-sdk-intermediate/lessons/lesson-5-serial-peripheral-interface-spi/topic/exercise-1-10/.

Thanks.

BR

Kazi
