Both the central and peripheral devices are nRF52840 using Coded PHY and NCS v2.7.0.
I know that there has been some issues related to the coded phy. This is actually listed under known issues, also for NCS v2.7.0:

(source: https://docs.nordicsemi.com/bundle/ncs-latest/page/nrf/releases_and_maturity/known_issues.html#softdevice_controller - you need to select v2.7.0 from the drop down menu at top)

This should be patched in v2.8.0, so perhaps you can test your application there. I don't know if you are currently using sysbuild to build your application. If not, you can still choose to not use sysbuild in v2.8.0, so it should be fairly quick to port the application to v2.8.0, and see if the issue goes away.
