There is this customization guide. By default, template uses nRF Cloud CoAP, but this can be replaced with some other MQTT implementation.

thanks for the information. I have AWS_IOT compiled and working. I can publish data to AWS. I also built the "asset tracker template". It wants to talk to nRF cloud. I need to be able to talk to the AWS cloud. Do you have an example that talks to the AWS cloud? AWS is essential to our application and customer requirements. I appreciate any help you can give.

Asset_tracker_v2 sample was removed in NCS v3.0.0. Please refer to this migration guide. It has been replaced with Asset Tracker Template. You can also look at AWS IoT sample.
