Found a solution to the problem. Sharing with all.

The issue is with the overlay file.

1. Changes in bmi270 : zephyr,deferred-init; changes to /* zephyr,deferred-init;*/

2. In &i2c21 add "zephyr,concat-buf-size = <257>;" after clock-frequency = <I2C_BITRATE_FAST>;

Getting BMI270 working fine with the above changes. (Screenshot below)

The device tree is showing properly, and the device list in the shell prompt is BMI270 IS DISABLED. Having checked with status= "okay" in the overlay file has no impact on the device list in the shell command.
