We are in the final stages of development and are trying to tune our device to perform its best in noisy environments:

We are using nRF52833 SOC as a central controller with an HCI interface.
We are using NCS version 3.1.0

There is no automatic implementation here no. Usually the time on air is short, and due to the continues frequency hopping in Bluetooth there is not really much need of updating the channels on the fly, because it will change very fast. That said though, in the softdevice controller there exists a feature where it's possible to monitor the channels, and based on that you can update the channel map from the central device if you like to.

For more information check out the proprietary feature support: QoS Channel Survey (experimental support)
https://docs.nordicsemi.com/bundle/ncs-3.2.1/page/nrfxlib/softdevice_controller/README.html

The feature is also used in the nRF Desktop, see: Optionally, you can also enable the following module: Quality of Service module
https://docs.nordicsemi.com/bundle/ncs-latest/page/nrf/applications/nrf_desktop/bluetooth.html

Best regards,
Kenneth
