Ok, but will at least the NRF dongle be able to pick up the actual data from the Nordic UART service?

I don't know if the adafruit device will work or not. In order to work it will at least need to have the same pin mapping..

Does this BLE application require the use of a NRF51 dongle, or can I possibly use the NRF51 sniffer from adafruit: www.adafruit.com/.../2269 or maybe a regular bluetooth dongle? Will it also be possible to send the data using the Nordic UART service?

The easiest way to make you computer communicate with your BLE device is probaly to get hold of a nRF51-DK or a nRF52-DK and use python with pc-ble-driver-py to create a BLE application, see this blog post.
