The maximum value is 510, but you can't write 510 bytes in one operation.

I don't think so, does sd_ble_gattc_write() inside tx_buffer_process() return NRF_SUCCESS (0x00000000)? You can put a breakpoint in the last else, and see if you hit it. You may have to turn off optimizations to see the value of err_code.

Have you changed attr_char_value.max_len in led_char_add()?
