Hi, I think you can refer to Contiki OS which has been ported to NRF5 in their latest release. The Contiki OS includes uIP stack with IPv6, UDP, RPL and RESTful protocols and is suitable for IoT research.

It looks like the latest IoT SDK currently only include IP stack with IPv6 on the network layer and UDP protocol as transport layer.
