I prefer the nRF52 series as it has the BTLE 2 Mbps mode which doubles the on air bandwidth, but mono audio works quite well even with BTLE 1 Mbps mode.

We have examples for Mono audio in the Smart Remote 3 reference design. However we do not have examples for stereo audio.

Our customers have however been able to achieve stereo streaming so this is indeed possible and this has been done using the nRF51 series.

One of the key challenges that you need to address will be Left and Right synchronization, which make stereo streaming a bit more complex than mono streaming. Unfortunately we do not have an out of the box solution for this.

I'm afraid your description is pretty vague. Note that there is no audio-transfer protocol defined for Bluetooth Low Energy (yet) and so no Nordic chip is meant for such applications. However BLE might achieve (with some assumptions like low-noise environment = good link) bandwidths which might be OK for some Low/Mid res audio application. Then you are giving us a choice between 5-year-old nRF51 chip and not-yet-available nRF52840 ignoring other options like nRF52832. In the end answer will largely depends on how good you are with embedded programming (C) because application you are talking about requires lot of custom code and skills.
