This (btle dissector) is the dissector that is showing you the UNKNOWN. The btle dissector is owned by the WS community and you are better helped in their forums.
You should switch to WS 2.4.x if you want to see what the WS community has decided about the "UNKNOWN" and this is not in Nordicsemi control.

See this answer to use WS 2.4.x with the Nordicsemi sniffer firmware .

RE: nrf Sniffer, is there a way to define "unknowns"?

You guys came up with the sniffer, did all the work, implemented, made available to your customers - and when you use internally you just see "UNKNOWN" all over the place - just live with it? No one there has ever looked into what it takes to add information? I find that difficult to comprehend.

RE: nrf Sniffer, is there a way to define "unknowns"?

This is a wireshark question as you are adding information on the handle to UUID relationship, this means a bit of state maintenance. I agree this is useful but you will be better helped in the Wireshark forums.
