I don't know anything about your sleep time because that's in your code. But Nordic BLE UART Service (NUS) is basically transport layer (from your application point of view). So you can and should define some protocol on top of it and act based on the commands received. No one really works with "strings" in BLE but if you want you can encode strings on top of byte-oriented BLE GATT data, everything is possible.

All of that is possible simply if you write such functionality to your FW.
