You could start with an example project, then edit the .emProject file with a text editor.

Thanks Martin,

Unfortunately, the projects I inherited are ARMGCC GNU Makefile projects. I can just take the time to re create them in SES I think.

Not that I'm aware of. There is a feature in SES you can use to import Keil projects though, so if you are importing Nordic SDK projects maybe you can do that.
