We are building a product in the field of Sports, specializing in running shoes. The concept is to correct running form via analyzing the foot strike of the user. Is it Mid strike? Forefoot Strike or Heel Strike?

Well, a quick search for accelerometers and gyros tells me that there are embedded models with an I²C interface. The cool thing about I²C is that you can chain peripherals into a bus, giving you a (theoretical) maximum of a couple hundred peripherals. Hardware limitations can push this number down to 8 or so (read the datasheets for your accels and gyros!).

See https://devzone.nordicsemi.com/f/nordic-q-a/1843/i2c-example-with-nrf51822 for more info about getting started with development of I²C on a nRF chip.

If you opt for more bare-metal accels and gyros, have a look at the pin assignments of the 52840 - there should be more than enough.
Am I required to engineer the PCB myself or is there a out-of-box solution available that I can custom configure?
Out-of-the-box is gonna be impossible for something with multiple sensors like this. You might want to have a look at the nRF51 dongle and grab a couple of accel-gyro breakout boards. That should give you something small enough for prototyping.

RE: Building a GAIT/Running Form Analysis Shoe Clip-on Sensor

Found another similar option http://www.st.com/en/evaluation-tools/steval-wesu1.html want to explore what nordic has to offer

RE: Building a GAIT/Running Form Analysis Shoe Clip-on Sensor

Its expensive as well, I cant sell the end product with the device cost being so high..any other alternatives?

RE: Building a GAIT/Running Form Analysis Shoe Clip-on Sensor

This will be big to fit on a shoe for long duration.
