According to the information from the nRF5 SDK for mesh 2.0.0:

"Support for the nRF51-series platform is being dropped, but building the examples¹ is still supported using the CMake build system."

We are still able to build some examples for nRF51, but for the examples with proxy feature, only nRF52 supports it.

To create the SES workspace for nRF51, please check the following link.

In the paragraph "Generating SEGGER Embedded Studio project files", it shows how to generate the nRF51 SES workspace through CMake.
