That's a question for the ST documentation - it has nothing to do with Nordic!

Firstly, can I achieve reading a register value over SPI signals from one of the I2C & SPI interface compatible sensors on sensor board using Nordic SDK APIS?

Hi,

I suggest to use a logic analyzer (e.g. https://www.saleae.com/) so you can observe the actual spi lines.

I also suggest to use the reference example as a starting point with as little modifications as possible: \examples\peripheral\spi\
