I'm sorry, but differences between datasheets for various e-ink paper displays are not Nordic related. You might have better luck if you ask on a forum dedicated to general electronics or e-ink displays. If you have specific questions related to Nordic products I'll be happy to help though.

Your question isn't very clear, but I'm assuming you are trying to interface a 7.5 inch E-ink Paper Display using code written for a 1.44 inch EPD and wondering whether you have to make changes to the code?

You should read the datasheet for both EPDs and compare them. At the very least I guess you will have to change some parameters defining the resolution.
