Thanks for your answer John. I did some weekend reading in the Bluetooth docs and it confirms your answer.

Advertising and Response Data Package format can be found in the BLUETOOTH SPECIFICATION Version 4.1 [Vol 3] page 387. www.bluetooth.org/.../DownloadDoc.ashx

The Advertising Package format references to Assigned Numbers that can be found at www.bluetooth.org/.../generic-access-profile There, check AD Type 0x16 - «Service Data - 16-bit UUID» which references to Core Specification Supplement, Part A, section 1.11

Core Specification Supplement: www.bluetooth.org/.../DownloadDoc.ashx Section 1.11 is SERVICE DATA (page 19)

From what I can interpret of this documentation any GATT Service Data can be sent in the advertising package.

The battery service and health thermometer services are standard services defined by the SIG. So it is absolutely valid to use their 16 bit UUIDs in the service data. You can find both profiles on the SIG website.
