Thank you droghio for pointing out my error. I used pip to install nrfutil in a python 2 environment and that executable worked. I would still like to hear from Nordic about ways to resolve the issue with pyinstaller so that I can create a self-contained nrfuil executable for mac.

Can you double check your python environment for the pip install? It looks like it is using the python 3 vs 2. Not sure about the issue with pyinstaller but explicitly installing nrfutil with a python 2 pip worked for my mac setup (using python 2.7.15 from HomeBrew).
