Thanks for the answer. I was trying to find the documentation on the IPC interface between the application CPU and the modem CPU. Could you direct me to the right location? Maybe I am just overlooking it.

Yeah, I find that Zephyr is overly complicated for nothing. I prefer the bare metal SDK similar to the nRF5x series so it can be easily integrated in any thing we want.

Yes, the AT commands supported by the nRF9160 modem is documented here. We have a AT client example in the nRF Connect SDK, see here on github.
