Yes, you can have the Gateway send messages to any other MQTT server. You can find information how the communication works here: https://github.com/nRFCloud/gateway-cordova/blob/a70b724015ebf34433f0cabdd1a49d39df8f35e4/docs/connecting.md

But your local server needs to implement the logic for controlling the gateway also, and we have not yet open-sourced this.

So in your case I would take the examples on how to connect to a peripheral from the gateway source code and implement your own communication scheme with your endpoint.

If you do not want to use a mobile phone as the gateway & instead using a Raspberry Pi, you can take a look at this link for more info.

Do you want the gateway to connect to your own local server instead of the nRF Cloud server? Or have I misunderstood the question?
