I understand that pairing is not possible from the iOS operating system.
The pairing must be managed by my BLE application.

Honestly I don't know, iOS 8 is a rather old OS version, it may be some limitations. In general if you have setup the security level of the characteristics I would expect iOS to bond/pair with the minimum requirements set by the security level required by the characteristics in the GATT database of the peer, otherwise it would not be able to access them.

I forgot to specify an important thing.
The "Pair" function is available on the "nRF Connect" program for windows, but is not available on the iOS version.
I couldn't find this feature on the iOS version. I'm wrong ?

Hi Kenneth,

Do you want to tell me that it is normal for my iPAD mini (ioS 8.0 and BT4.0) not to see my BLE device on the internal settings ?
If I try with a newer iPAD (for example with BT5.0 and iOS 12) on the internal settings will I be able to see my BLE device ?

I am already using the application to refer to "nRF Connect" to do tests with my BLE device.
The problem is that I could not get encrypted communication.
Is it possible to do this with iOS ?
How can I do ?

Typically the OS will only display some common HID devices in the BT listing, if you want to connect to other BLE devices you need an app for it, for test you can use nRF Connect:
