Is there a project that implements OOB protection for bonding?

It seems to me that a simple solution would be to wait in the code for the button-press before proceeding to the bonding procedure. If the button is not pressed within some time-limit for example, the device should disconnect and abandon the bonding procedure.

You could look at the ble_app_multilink example to get some idea of how to do this. For example, before bonding you could flash a LED, wait for the button, and if it is pressed, continue. If not, abort.
