The .dat file of a DFU contains the init packet. It contains information like firmware version, a hash of the image, signature, SoftDevice dependencies, etc.

The .JSON file is a configuration file used in DFU over TFTP and contains DEV_TYPE and DEV_ID for each firmware type, paths to init files, and paths to firmware images.

Is there any particular reason you need the DFU to be only a .bin file? Is what you actually want to avoid the signing of the DFU process? I think this DFU example does it without signing, but the .dat file is still present, as you won't be able to do DFU with only a .bin file.

No, this won't be possible. The DFU .bin file is signed, so without the other contents of the .zip file, it will be useless (unreadable). You'll need the full .zip file to do a DFU.
