I ordered a new development kit and gave up trying to follow new documentation with old hardware.

I don't think we have any pre-build bootloader. But it should not be any problem to build one using KEIL, out of the box. @lab-stellios: Do you still have any trouble to have a bootloader.hex file to use ?

So we need to open that project and build it to get access to the bootloader hex? There's no pre-built, standard hex like there is with the soft device?

Here is the location of the bootloader.hex file:

SDK6.1/nrf51822/Board/nrf6310/device_firmware_updates/bootloader/arm/_build/bootloader.hex

I would start with the HRS example(with DFU):

C:\Nordic Semiconductor\nRF51_SDK_7.1.0_372d17a\examples\ble_peripheral\ble_app_hrs\pca10028\experimental_s110_with_dfu\arm.

There is no app note but I think you are looking for this:
