You should select app_uart with FIFO from Run Time Environment of Keil.

Actually, this example also sends and receives over the hardware UART. It receives messages from a central device and forwards that to the hardware UART (see nus_data_handler callback function) and receives data from the hardware UART (see UART0_IRQHandler) and forwards that to the softdevice in order to send it over BLE. Do you think that could help you to figure out how to do this?

Have you seen the UART example in the nRF51 SDK 7.2.0 under \Nordic\nRF51_SDK_7.2.0_cf547b5\examples\ble_peripheral\experimental_ble_app_uart which also uses the S110 softdevice.
