Please look for nrf_mesh_weak.c in your project. It's included in the default light switch example.

Could you tell which nRF Mesh SDK version you are using ?

Do you enable DFU in your application ?

If you don't the missing function should be defined (weak) in nrf_mesh_weak.c . This file should be included in your project.
