Thank you, my issue was I had not installed the bootloader settings page correctly after generating my keys. This tutorial was helpful (but based on an older SDK version, but I couldn't find anything that has changed with the process listed)

What terminal are you using when you try logging your application? I just tried both UART and RTT and got them both to work, only changing the NRF_LOG_BACKEND_UART_ENABLED and NRF_LOG_BACKEND_RTT_ENABLED parameters. Please follow the instructions on the Infocenter to see how to set up and test the example.
