What I've noticed is that at sdk_config.h file the pin configuration is:
SPI_SCK_PIN 26
SPI_MISO_PIN 30
SPI_MOSI_PIN 29
SPI_SS_PIN 31

Some of the pins can be used as analog inputs, but they are still digital IOs even if they can be used as analog inputs. Any GPIO pins can be used for any digital interfaces or peripherals, provided they are not already assigned. Similar for the analog peripherals, can be assigned to any Analog inputs, so if you are unhappy with the default configuration in the example you are welcome to change it.

Best regards,
