Yes you are correct, there are many tables in the nRF51 compatibility matrix showing compatibility of different things. What you need to look at there is table 4. In that table you can see that the nRF51 Development kit (nRF51 DK) is compatible with S110 softdevice (SD) 7.1.0 and 8.0.0.
