You only see these three channels because these are the channels used for regular BLE advertisements, connection requests, etc. As Turbo J is saying, the DK can capture packets in the other channels, but there is rarely activity there unless you do a specific interaction in your application trigging data to be sent on those channels.

why？ do you mean my hardware nrf52840-dk couldn't capture the packet on the data channel (except 37 38 39)?

Those are the 3 advertizing channels in the BT LE specs. Advertisements and connection requests will only appear on these channels.

Other channels will only be captured following a user interaction, i.e. selecting a specific device.
