The problem was just a confusion of versions in my Mac Apps folder. From previous tests I had versions named SEGGER...etc - these are now deleted.

When I repeated the download I saw that it does not do a conventional package installation. So I copied the folder into the place it should be. The problem was that the download is named arm_segger_embedded_studio_v452_macos_x64_nordic.

Now that I renamed it segger_embedded_studio_v452_macos_x64_arm_nordic I will not get confused.

And it *does* have the nRF Connect options.

Thank you for the feedback regarding the link.

Here is a link for downloading and installing Segger Embedded Studio Nordic Edition. Switching to the macOS tab should allow you to download SEGGER Embedded Studio (Nordic Edition) - Mac OS x64

However, if you would like to give the Toolchain Manager approach a try, then I could recommend following the nRF Connect SDK Tutorial series - Part 0. Here is what the tutorial says regarding the use of Toolchain Manager vs. a manual installation of NCS:

"Installing the nRF Connect SDK through the Toolchain Manager is by far the easiest approach, as it just requires a button click. The drawback of this method, compared to the other alternatives, is that checking out and using other tags/commits (check out section 1.3 Master vs. Tag) may lead to failure due to toolchain compatibility issues. If you would like to be able to switch between tags/master/commits flawlessly, it is recommended to install NCS manually. Check out Installing the nRF Connect SDK manually for instructions on how to do this. "

Part 0 of the mentioned tutorial will take you through these easy steps:

Installing nRF Connect for Desktop which allows you to
install Toolchain Manager, which allows you to
install nRF Connect SDK(NCS) which actually also installs the correct version of Segger Embeeded Studio Nordic Edition for you.

Evidently I have the wrong version of Embedded Studio. I got this version from a link on a Nordic web page and have deleted earlier versions. The above two options are not present. What is the definitive download page pls?

It is strange that you cant see the nRF Connect tab. Do you perhaps have multiple versions of Segger Embedded Studio installed? The next time you open SES, could you please double check that you actually open "Segger Embedded Studio for ARM (Nordic Edition) V4.52"?

If things are correctly installed you should be able to find the nRF Connect tab under Tools>Options. You should also find File>Open nRF Connect SDK Project.

Sadly this page (the one I was following) does not lead me to anywhere the Zephyr base can be set.

It says

Click Tools > Options and select the nRF Connect tab.

There is an options page but it has no nRF Connect tab.
