That is right, the PCA10059 does not contain the SEGGER chip that do the UART -> USB transfer. It would require quite a lot of change if the nRF52840 should do this also.

It means PCA100059 (which is nRF52840 USB Dongle ) doesn't work as sniffer ..? since it's not listed in the supported devices

The nRF52840 dongle is not support, see here for supported hardware:
