I am new to developing with BLE so any help to this frustrating problem would be greatly appreciated!
Firstly, I am using SDK16, Soft Device 113, v.7.0.1 on a custom prototype board using an nrf52832 module.

Which nRF Connec are you using? If you are using nRF Connect for a phone, it may cache the characteristic, you may need to remove the device from the Bluetooth menu and also enable/disable flight mode to clear the cache. If you are using nRF Connect for Desktop (Windows) this should not be a problem.

Best regards,
Kenneth
