Do you mean examples/ble_peripheral/ble_app_gatts_c?

I try to study this example but I am afraid it is not clear to me how I can add to the SD a custom service with its respective characteristics.

Am I looking to the wrong place?

Yes. Please reference the ble_gattc example. Add on the gatt characteristics in your applicatuion.
