You can have two bulk in endpoints, but then you would not use MSC.

Instead you could use WinUSB or one of the wrapper Libs (LibUSB, LibUSBK) which can use WinUSB as driver. A bit more difficult to set up, but works better than COM ports.

I want to use two bulk endpoint in to send data from ADC to PC.

But could I create an MSC + MSC composite device so that I have 2 IN BULK endpoints?

No, that won't work with the MSC class - USB mass storage uses both endpoints to communicate with the host.

What are you actually trying to achieve?
