I tried Blinky, Hello World and some others. Every sample I tried had the same issue and I had to do the workaround I described above before it would download.

Hello, yes, you should be able to emulate nRF52805 on the nRF52 DK:

The nrf52dk_nrf52805 board is a modified version of the :ref:`nrf52dk_nrf52832`
that enforces the limitations imposed by the nRF52805 IC, which is a
cost-reduced variant of the original nRF52832. Since Nordic does not offer a
development kit for the nRF52805, you can use this board to develop for this
IC while using the nRF52 Development Kit (PCA10040).

What sample are you trying to build?

I set Target Device to nRF52805_xxAA in the solution options under "Debugger" and that seems to have solved it. Looks like there's a bug where it doesn't get set correctly for this target when the project is created.
