Sorry for the late response.

As you know , the gaming mouse example support up to 4 peers. One reserved for dongle peer and the other three for Bluetooth LE peers. You can use one of the three for another dongle and switch to the dongle by selecting the HW switch on the bottom of PCA20041 mouse to middle position and then short-press on the button located on the left side of the mouse.

As for erasing bond info , you can find the information in BLE Peer Control section:
