From what i can tell, there are plans for LE Audio API in Android 12, so as long as the hardware supports it then it would be supported from that version. I am not sure about the status for iOS.

Yes, LE Audio is an optional feature. For more information about LE Audio and the current status, see e.g. One step closer to Bluetooth LE Audio.

Don't worry, this is a good place to ask this question!

The nRF Connect app has a "Device information" page where you can see a list of Bluetooth features and whether or not they are supported on the phone. I assume that is what you refer to.

Currently there are no features from Bluetooth 5.1 or later listed, but the nRF Connect app is under continuous development and you should expect new features to get listed in the future. We intend to add listings for features supported by our SoCs. However in order for features to get listed they must also be supported by the smartphone OS and be detectable through its API.

There are optional features in Bluetooth 5.1 and 5.2. Most notably Angle of Arrival (AoA) and Angle of Departure (AoD), both for direction finding, in Bluetooth 5.1, and LE Audio in Bluetooth 5.2.
