SOLVED: For some reason the CONFIG_FPU=y was not defined in he generated build/zephyr/.config under 1.6.0-rc2 but is under 1.5.0.
I added CONFIG_FPU=y to prj.conf and it resolved the issue.

I am currently looking into your issue.

Is your project based on one of the pre-existing samples in NCS? If so, which one?

v1.6.0-rc3 tagged on github now. Can you try installing that and see if you get the same error there?
