Yes, these are just examples, and just the most common sleep scenarios are covered. The nRF52832, which has been around for a longer time has a few more, and you can see that the system OFF current is very similar whether it wakes on a GPIO or a RESET. I think it should be similar for a GPIO port event as well.

The System Off sample wakes on a GPIO port event, not just reset, so I guess I would be looking for "System OFF, No RAM retention, Wake on GPIOTE PORT event"

That doesn't seem to match any of the entries in that section of the production specification. Is it the case that there are possible configurations which are not included in that list? Are they just examples?

There are two system OFF "modes" mentioned in the Product specification sleep section as well. OFF_RAMOFF_RESET and OFF_RAMON_RESET, depending on whether you're using RAM retention or not. The current consumption for an nRF52810 should be ~0.3uA in system OFF mode with RAM retention disabled.
