For the nRF5340 you need to set the MTU configuration both for the hci_rpsg running on the network core and for the application. It is clean to do this like you do here, having child_image/hci_rpmsg.conf in the folder of the application. You can refer to the Throughout sample to see the relevant configuration for the network core and application core. See also this post.
